Hi Friends! I hope that you are all keeping well during these uncertain times. I’ve got a quick recipe here that you can whip up with those spoiling banans! These Date Sugar Banana Muffins, are perfect for breakfast, a snack or dessert! I love using almond flour in this recipe, so it is also gluten-free. I made this recipe with date sugar to sweeten it. If you haven’t heard of date sugar before, definitely try it! It a low-calorie sweetener that is high in fibre. If you don’t have date sugar at home for this recipe you can use honey or maple syrup. WHY YOU WILL LOVE THIS RECIPE
If you are looking for a quick recipe to use up those bananas this is it! I love using almond flour in my baking, so these almond flour banana muffins are my go-to when those bananas start to get ripe! These Date Sugar Banana Muffins are quick to make and you can add so many things into them! I like to use mini chocolate chips, but raisins or craisins will give the same amount of sweetness! I also like to top the muffins with a banana slice!
TIPS ON HOW TO MAKE THIS RECIPE
- You can swap the date sugar for a 1/4 cup of your favourite sweetener like honey or maple syrup
- Add in nuts or raisins instead of chocolate chips!
- When mashing the bananas, make sure you get out all the clumps! This will make your muffins moist and the flour will mix better
