We finally introduced tomatoes into our diet! I will be completely honest, I don’t like tomatoes. Especially raw. I usually pick them out of everything. So I wanted to find a way that I could enjoy them along with my husband. Roasting is the answer! I have to admit I didn’t think I would like tomatoes in any form…but I was wrong! This Brown Rice Spaghetti with roasted tomatoes is very delicious! Tomatoes roasted with garlic add great flavour to this brown rice spaghetti dish. Using fresh, roasted tomatoes is a great and healthy alternative to using store-bought pasta sauces. I hope you enjoy!
WHY YOU WILL LOVE THIS RECIPE
I am not a tomato lover, but I love this recipe! Roasted tomatoes are delicious on top of pasta, chicken, any main dish really! They remind me of sundried tomatoes, but not completely dried out.
TIPS ON HOW TO MAKE THIS RECIPE
- I like to heat grilled chicken strips in a pan to get them hot and a bit crisp before adding them to the dish.
- Follow the directions on the package for your brown rice spaghetti. I find that different brands have different cooking times and you want to ensure that your pasta is cooked through.
- Rinse your brown rice pasta with cold water! You want to make sure that it doesn’t stick together

Brown Rice Spaghetti with Roasted Tomatoes
Ingredients
- 1 cup of fresh cherry tomatoes I used Village Farms
- 2 tsp olive oil
- 1 tsp of chopped garlic
- 1/4 tsp of salt
- 1/4 tsp of black pepper
- 1/3 package of Brown Rice Spaghetti package I used Pasta Joy Ready
- 1 tsp Herbamare
- 1/2 tsp dried basil
- 1/2 tsp of garlic powder
- A handful of spinach
- 1 cup of grilled chicken strips
Instructions
- Preheat oven to 400 degrees celsius
- Wash tomatoes and toss in 1 tsp of olive oil, chopped garlic, salt and pepper
- Roast tomatoes on a baking sheet in the oven for 20-25 mins until they start to burst
- When finished remove tomatoes from the oven and set aside
- Boil pasta according to directions with 1 tsp of salt in the water
- Ensure pasta is cooked through (15-17 mins)
- Rinse pasta with cold water in the strainer and then coat with the other 1 tsp olive oil, herbamare, dried basil, and garlic powder. This adds flavour to the pasta since we are not coating it in a sauce
- Add spaghetti to plates and top with spinach, grilled chicken strips and roasted tomatoes
- Enjoy!
