Hi Friends! I know that these are trying times for everyone. We are dealing with many anxieties around Covid 19. What has warmed my heart is seeing so many people baking and cooking and trying new recipes! Scrolling through social media I am seeing so many people cooking! I wanted to bring you all some recipes that I love during this time. They are simple to make and I hope that you and your loved ones enjoy them. That they bring you a little joy in this time of uncertainty. This Tasty Greek Village Salad is one of my favourite dishes to get when I order take-out Greek food! Over the next few weeks, you will see some Greek related recipes coming your way because being inside myself, I have been recreating some of my favourite take-out dishes!
WHY YOU WILL LOVE THIS RECIPE
This recipe is made without lettuce! I love greek salad or “village salad” as it is often referred to because it is just packed with veggies! This Tasty Greek Village Salad is a great salad to meal prep as well as it doesn’t go soggy! You can leave it in the fridge for the week and add it to all your meals!
TIPS ON HOW TO MAKE THIS RECIPE
- Chop the red onions into small strips. I find that if they are too large, they overpower the rest of the salad
- You can also add parsley to this recipe if you want to have some sort of green herb
- If you want to use this recipe for meal-prep, omit the cut-up tomatoes for cherry tomatoes so that your salad will not get soggy

Tasty Greek Village Salad
Ingredients
- 1 Cucumber
- 1 Tomato
- ½ Red Onion
- 1 Sweet Bell Pepper
- ½ can Black Olives
- ½ Cup Feta Cheese (I like to use the small cubed)
- 1 tbsp Olive Oil (extra virgin)
- 1 tbsp Dried Oregano
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- Cut all your vegetables into bite sized pieces. Cut the red onions into thin strips
- Combine vegetables in a bowl with oregano, olive oil, salt and pepper
- Add feta and olives
- Mix well
- Enjoy!
Notes
- Add a bit more olive oil if you plan on leaving it in the fridge long, so that all the vegetables are lightly coated
