Dairy-Free Rice Pudding
Servings: 8 servings
Ingredients
- 1 cup rice (jasmine works well)
- 4 cups almond milk (divided)
- 1/8 teaspoon fine sea salt
- 1 cinnamon stick
- 4 cardamom pods
- 1/2 cup maple syrup
- 1/2 cup raisins
- 1/2 tsp ground cinnamon
- 1/2 tsp of ground nutmeg
- 1/8 tsp of ground cloves
Instructions
- Wash and drain your rice thoroughly
- In a medium saucepan add the rice, 3 cups of almond milk, salt, cardamom pods and cinnamon stick
- Bring to a boil over medium heat and stir often
- Once at a boil, reduce your heat and add the maple syrup, ground cinnamon, nutmeg and cloves
- Keep on low heat, stirring often until you see the milk is absorbed through the rice
- Remove the cinnamon stick and cardamom pods
- Add the last cup of almond milk and stir in the raisins
- Keep on low heat until all the almond milk has been absorbed again
- Serve either warm or cool with cinnamon or nutmeg sprinkled on the top
