Coconut Flour Chocolate Chip Cookies
Servings: 12 Cookies
Ingredients
- 1/2 cup of almond butter
- 2 Tbsp of coconut oil
- 1/2 cup of coconut sugar
- 2 eggs
- 1/2 tsp of vanilla extract or vanilla powder
- 1/4 tsp of ground cinnamon
- 1/4 tsp of ground nutmeg
- 1/4 tsp of sea salt
- 1/2 cup of coconut flour
- 1/2 cup of dairy-free chocolate chips
Instructions
- Preheat oven to 350 degrees F
- Line cookie sheet with parchment paper or a silicon baking mat. I use this one from Amazon
- Place almond butter, coconut oil, and coconut sugar in a bowl and mix well. I use a stand mixer, but you can also use a hand mixer
- Add the rest of the ingredients except the chocolate chips. Mix well to combine
- Using a spatula fold in the chocolate chips
- With a spoon, scoop the dough and form a small ball
- Place the ball on the lined cookie sheet and flatten. These cookies do not flatten when baking, so try and flatten the cookies to the look you would like
- Bake for 7-10 minutes until the cookies turn slightly brown on the edges
- Let cookies cool for 10 minutes before serving
