Put graham crackers into a plastic bag and crush with a rolling pin. Make sure you crush it into crumbs
Melt butter in the microwave and stir into graham crumbs
Press graham crumb mixture into the bottom of the pan
In another microwave safe bowl, empty the can of sweet condensed coconut milk and dark chocolate chips
Melt the coconut milk and chocolate chips in the microwave for 15 seconds at a time stirring constantly until the chocolate chips have completely melted
Pour the chocolate coconut milk mixture on top of the graham crumb mixture
Top with mini marshmallows
Set in the fridge for 5 hours or overnight
After fudge has set, remove from the fridge and use a kitchen torch to toast the marshmallows
This may melt the top of the fudge, so put it back in the fridge for a few minutes to harden the top again
Once set, remove from the fridge and slice
Enjoy!
Notes
If you aren't dairy-free you can make this fudge recipe with regular condensed milk
If you want to have a thicker crust, bake your crust in the oven before pouring the chocolate fudge mixture on top
If you don't have a kitchen torch, you can broil your marshmallows in the oven separately and then top your fudge with them after they have cooled down a bit
