Cook strawberries in a medium saucepan until the fruit starts to break down and become syrup, for about 5-10 mins stirring with a spatula every 1-2 minutes
If you prefer a smoother jam, mash some of the strawberries with the back of the spatula or leave it as lumpy as you want
Remove from heat and add honey and lemon juice mixing it all together
Taste to ensure you have the right amount of sweetness add more honey or lemon juice to your preferred taste
Stir in chia seeds
Let it stand for 5 minutes to thicken. You will see the jam firm up and taking on a thicker consistency. If after 10 mins the jam is not as thick as you would like it to be, stir in another 1 tsp of chia seeds
Transfer to mason jar for storage

Notes
If you don't like honey for sweetening you can also use agave, maple syrup or sugar.
Jam can be stored in the fridge for 2 weeks or in the freezer for 3 months
